Valentine Recipes:

Molten Lava Cake:

Ingredients-
  • 6(1 ounce)squares bittersweet chocolate
  • 2(1 ounce)squares semisweet chocolate
  • 10 tablespoons (11/4 stick)butter
  • 1/2 cup of all-purpose flour
  • 1 1/2 cups confectioners' sugar
  • 3 large eggs
  • 3 egg yolks
  • 1 teaspoon vanilla extract
  • 2 tablespoons orange liqueur
Directions-
  Preheat oven for 425 degrees F.
     Grease 6(6- ounce) custard cup.Melt the chocolates and butter,in the microwave,or in a double boiler.Add the flour to the chocolate mixer.Stir in the eggs and yolks until smooth.Stir in the the vanilla and the orange liqueur.Divide the batter evenly among the custard cups.Place in the oven and bake for 14 minutes.The edges should be firm but the center should be runny.Run a knife around the edges to loosen and invert onto dessert plate.

Red Velvet Cupcake with Cream Cheese Frosting


Ingredients:

  • 2 1/2 cups all-purpose flour
  • 1 1/2 cups sugar
  • 1 teaspoon baking soda
  • 1 teaspoon of salt
  • 1 teaspoon cocoa powder
  • 1 1/2 cups vegetable oil
  • 1 cup buttermilk,room temperature
  • 2 large eggs,room temperature
  • 2 tablespoons red food coloring
  • 1 tablespoon white distilled vinegar
  • 1 teaspoon vanilla extract
Cream Cheese Frosting
  •  1 pound cream cheese,softened
  • 2 sticks butter,softened
  • 1 teaspoon vanilla extract
  • 4 cups sifted confectioners' sugar
Choose pecans,raspberries,or strawberries for garnish

Directions-
     Preheat oven to 350 degress F.Line 2(12 cup)muffin pans with cupcake papers.

In a medium mixing bowl,sift together the flour,sugar,baking soda,salt,and cocoa powder.In a large bowl gently beat together the oil,buttermilk,food coloring,eggs,vinegar,and vanilla with a handheld electric mixer.Add the sifted dry ingredients to the wet and mix until smooth or thoroughly combined.Divide the batter evenly among the cupcake tins about 2/3 filled.Bake in oven for about 20 to 22 min.,turning the pans once,halfway through.Test the cupcakes with a toothpick for doneness.Remove from oven and cool completely before frosting.

Cream Cheese Frosting-

In a large mixing bowl,beat the cream cheese,butter, and vanilla together until smooth.Add the sugar on low speed,beat until incorporated.Increase the speed to high and mix very light and fluffly.

(If want to)Garnish with pecans,raspberries,or strawberries to your liking.
Note:Frost the cupcakes with a butter knife or pipe it on with a big star tip.
